In 2010, Olivier and his wife Stéphanie set their heart on restoring the soul of a small hotel-restaurant in the so fittingly named village of Charmes-sur-Rhône. The hotel’s new image pays tribute to a Roman senator whose sarcophagus sits on the town hall square. The fresh colours and shades with the emphasis on modern, airy decor both in the restaurant and the rooms, gives the whole place a feeling of elegance and warmth. This is the setting where Olivier conjures up his inventive, sophisticated cuisine. The young chef skilfully juggles flavours, textures and colours and invites his guests to savour his culinary delights that move with the seasons. They feature locally produced ingredients that are paired with the truly remarkable wines of the Rhône valley. Nine quiet, colourfully adorned rooms await guests after an eventful day.
